Another great testimony comes from Cortilia’s research carried out on a sample of 2,872 customers aged between 25 and 64 (2023). 82% of the sample preferred artisan food, 89% preferred anti-waste shopping formulas and 66% opted for organic products. According to estimates by Global market insights in 2023, the organic food sector is estimated to be worth USD 12 billion.

Directly from oriental cuisine, seaweed, the baobab fruit, chia seeds, avocado oil and the yaupon fruit stand out. Big comebacks, on the other hand, for chicken (especially from non-intensive farms) and dates. According to the Osservatorio Immagino (2023), there was also an even greater interest in lactose-free products, which already showed growth of +12% in 2022 and vegan products +3%.
