In liquid form, powder or emulsion, flavorings are ingredients capable of infusing taste and flavor to food. In Italy, food ingredients with flavoring properties can only be used if they comply with the criteria established by European Community Regulation 1334/2008, they must be safe and subject to a risk assessment. The rule entered into force in January 2009 and was subsequently updated in January 2011 with new entries.

The global market for flavorings is expected to grow at a sustained rate of 4.8% per year between 2020 and 2025. This increase is driven by emerging countries, with Asia already representing the first continent of consumption for food flavors, but also South America, which should record the strongest growth in this period.
