CARNIVAL AND SHROVE TUESDAY: TRADITION, HISTORY AND CULTURE

One of the most extraordinary and eagerly awaited events of the year, after Christmas, is certainly Carnival. In February, and sometimes early March, it is undoubtedly the most jovial and colourful event of the year. Carnival is a festival celebrated in Italy and throughout the world, and in all Catholic countries. Its origins are ancient and rich in history: some accounts date carnival back to the Babylonians, the Romans, the Greeks, and even to prehistoric times.

Masks, dancing, singing, jokes, parades of floats and costume parades enliven the streets of cities all over the world. Carnival celebrations traditionally end on Shrove Tuesday, the day before Ash Wednesday, which marks the beginning of the period of Lent before Easter. The last day of Carnival was the last day on which the Catholic Church allowed all the most delicious food left in the house, which could not be eaten during Lent, such as meat, sweets and all the leftovers from the lavish carnival banquets, to be eaten. Every country has its own tradition, but the rule is always the same: bring delicious food to the table, especially meat and sausages that are not allowed during Lent. The food par excellence on Shrove Tuesday can only be meat, especially pork, which symbolises opulence and in some cases Carnival itself. Mixed grilled meats, lasagne stuffed with all kinds of meat, cold cuts and mixed sausages such as salami and sopressata are inevitable from North to South, as are fried foods.
